Speedy After Work Dinners

The majority of people warm to the idea of cooking a homemade dinner, but are put off by the time and effort it takes. And although ready made meals have come a long way there is still no substitute of satisfaction you get when cooking something from scratch.

Quick Chicken

There is no better ingredient for cooking a quick dinner than boneless, skinless chicken breasts. Just chose how many chicken breasts you would like, wrap each breast with a piece of unsmoked bacon and place the breasts, seam side down in a baking tray. Throw in a couple of cherry tomatoes, drizzle a couple of table spoons of olive oil, 2 table spoons of balsamic vinegar and sprinkle over some dried herbs. Season the chicken with salt and pepper and then bake in the oven for 30-40 minutes at 220C/400F/gas mark 6. Once cooked serve over tagliatelle or some other form of pasta.

Panic Free Pork

First of all put some rice on to cook. Peel and core an apple and cut it into slices. Then heat some plain oil and a little bit of butter in a frying pan and lay in the pork chops and scatter the apple slices around the edges. Fry the pork for about 1 minute on each side until brown and then pour in 1 small carton of apple juice, lower the heat and let it simmer until its done (about 10minutes). Once cooked serve the pork and apples with the rice and the sauce spooned over.
